Day 1 Stuffed Acorn Squash Baked Acorn Squash filled with a Seasoned Rice Stuffing with Pumpkin Seeds and Currants
Day 2 Split Pea Soup Low fat, light split pea soup with vegetables seasoned with cumin, red pepper and fresh rosemary.
Herbed Bread Strips Homemade bread with garden herbs throughout.
Day 3 Santa Fe Style Brown Rice Spicy brown rice mixed with corn, chipotle peppers, cilantro and onion.
Vegetarian Enchiladas Mexican Corn Tortilla Enchiladas rolled with a filling made of Zucchini, Mushrooms, Corn, Onions, and Sweet Potatoes topped with Mexican Tomato Sauce and Cheese
Day 4 Pasta, Tomatoes, White Beans and Basil Fresh tomato sauce with lots of garlic, white beans and fresh basil served over bicolor fettucine.
Garlic Bread Homemade little garlic bagettes
Day 5 Confetti Vegetable Curry Sweet Potatoes, Zucchini, Mushrooms, Red Bell Peppers, Corn, and Peas in a Curry Tomato Sauce.
Coconut Rice White Rice made with Toasted Coconut and Lime Zest
Day 6 Rice Patties New Orleans Style Brown rice patties with walnuts, basil and red pepper baked until golden.
Chunky Chili Bean and Tomato Conserve Green bell peppers, fresh tomato and dark red kidney beans.
Day 7 Stuffed Tamale Peppers Green and yellow peppers, stuffed with chili spiced black beans, corn, onions and tomato, topped with cheese.
Cumin Rice Rice flavored with a little Cumin, Onion, Tomato Paste
Day 8 Red Lentil Soup with Garam Masala Pureed Red Lentil Soup with the Classic Garam Masala Spices, Cardamom, Black Pepper, Cumin and Cinnamon
Roasted Green Beans Green Beans Roasted with Garlic and Onion, and finished with Balsamic Vinegar.
Day 9 Confetti Vegetable Curry Sweet Potatoes, Zucchini, Mushrooms, Red Bell Peppers, Corn, and Peas in a Curry Tomato Sauce.
